When Testing With Heat Gun Plate Temperature Is Not Accurate

The infrared heat gun would only be accurate if you placed a strip of electrical tape on the front edge of the top and bottom plate as the aluminum surface is reflective and won't read accurately. Please try with the electrical tape and let us know if that is more accurate.
